Teaching
For the past 6 years, I have been lucky enough to travel around Kenya training kitchen teams in luxury safari lodges. I am passionate about helping fellow chefs realise their potential, make the most out of their local produce and, in turn, improve the hotel’s offering.
Food & Me
Whether at home in London or in my Peardrop kitchen, you will find me cooking, inventing, plating, tasting, dreaming or talking about food. Creating new dishes keeps me up at night and gets me out of bed in the morning.
My style is farm-to-table and modern British, with one foot rooted in the UK while the other skips around Italy and France. My love of foraging and picking flowers and herbs, means my plates are colourful, fresh and garden-led.
My favourite London restaurants are Spring, Sessions Arts Club, Petersham Nurseries & Luca. I greatly admire Angela Hartnett, Chantelle Nicholson and Simon Rogan. My favourite vegetable is beetroot and if I had it my way, there would be Parmesan On Everything.
